Our Rice
Texas Saké Co. uses Calrose rice from California which is polished to 70% (30% of the outside is milled away). We have recently started experimenting with 60% Yamada Nishiki rice from Minnesota. Yamada Nishiki is considered the king of saké rice because it absorbs water easily, at a fast, predictable rate that is extremely important for the exacting science of saké brewing.
